Made by Mazama: the Machu Pisco

Recipe: Makes 1 drink

1.5 oz Pisco
1 oz Licor 43
3/4 oz fresh lime juice
1 drop almond extract
2 dashes chocolate bitters

Combine ingredients in a mixing glass with ice. Stir to combine. Pour into a wine glass filled with crushed ice. Garnish with a lime wheel.

Pisco, a grape brandy from Peru combines with Licor 43 from Spain, creating a unique culture clash in this cocktail. Licor 43 is becoming more readily available outside of Spain, so look for it next time you're at your local bottle shop. It's citrusy, vanilla flavor works well with fresh lime juice in many cocktails.

This drink has a small but important ingredient - a single drop of almond extract. We like to use this in place of overly sweet orgeat syrup (common in tiki drinks.) It adds a savory quality that adds depth to this drink.

Stir up this Peruvian inspired concoction, and you'll feel like you're at high altitude in no time.

Salud!
